
NYC-Style Chocolate Chunk Cookies

Thick, chewy, bakery-style cookies packed with rich chocolate chunks and naturally sweetened with organic coconut sugar. These cookies are big, bold, and absolutely irresistible fresh from the oven.
Ingredients
125g butter, softened
175g organic coconut sweetener
1 egg
1 tsp vanilla extract
300g plain flour
½ tsp bicarbonate of soda
1½ tsp baking powder
300g chocolate, chopped
Method
Preheat your oven to 180ºC (160ºC fan) and line two baking trays with parchment paper.
In a large bowl, cream together the softened butter and coconut sweetener until light and fluffy. Add the egg and vanilla extract, then mix in the flour, bicarbonate of soda, and baking powder to form a thick dough. Stir through the chopped chocolate.
Roll large balls of dough and place them onto the prepared trays, leaving space between each. Bake for 12 to 14 minutes until golden on the edges but soft in the centre. Let them cool on the tray for 5 minutes before transferring to a wire rack. Best enjoyed slightly warm.
