Lemonies

Think of these as the lemony cousin of a brownie — dense, chewy, and full of bright citrus flavour. Finished with a zingy lemon glaze, they're the perfect afternoon treat.
Ingredients
For the lemonies:
160g butter, softened
160g agave nectar sweetener
Juice and zest of 1 lemon
2 eggs
250g plain flour
½ tsp baking powder
For the glaze:
90g icing sugar
Juice and zest of 1 lemon
Method
Preheat the oven to 180°C (160°C fan) and line an 8x8-inch square tin with baking paper.
In a large bowl, cream the butter and agave sweetener together until light and fluffy. Add the lemon juice and zest, followed by the eggs. Mix in the flour and baking powder until you have a smooth batter.
Pour the mixture into the lined tin and smooth the top. Bake for 25 minutes until just set in the middle, then let cool completely in the tin.
For the glaze, mix the icing sugar with just enough lemon juice to form a thick but pourable icing. Spread over the cooled lemonies and sprinkle with lemon zest. Slice into squares and enjoy!
