
Coconut Sugar Blondies

These chewy, golden blondies are rich in caramel flavour thanks to coconut sugar, with melty chocolate chunks in every bite. Quick to make, even quicker to disappear.
Ingredients
115g butter, melted
200g coconut sweetener
1 egg
1 tsp vanilla extract
125g plain flour
½ tsp baking powder
½ tsp salt
100g chocolate, chopped
Method
Preheat your oven to 180°C (160°C fan) and line an 8x8-inch square tin with baking paper.
In a bowl, whisk together the melted butter and coconut sweetener until well combined. Add the egg and vanilla extract, stirring until smooth. Mix in the flour, baking powder, and salt until just combined, then fold in the chopped chocolate.
Pour the batter into the tin and smooth the surface. Bake for 22 to 25 minutes until golden and just set in the centre. Let cool in the tin before slicing into squares. Best enjoyed slightly warm for that perfect gooey middle.
