Blueberry Crumble Bars

Buttery shortbread-style bars layered with sweet strawberry jam and topped with a golden crumble — all naturally sweetened with agave. These are perfect with a cup of tea or as a fruity dessert.
Ingredients
250g plain flour
175g butter, softened
75g agave nectar sweetener
Pinch of salt
½ tsp vanilla extract
8 tbsp strawberry jam
Method
Preheat your oven to 180ºC (160ºC fan) and line an 8-inch square baking tin with parchment paper.
In a bowl, mix the flour, butter, agave nectar, salt, and vanilla extract until crumbly but sticking together. Press two-thirds of the mixture firmly into the base of the prepared tin. Spread the strawberry jam evenly over the base, then scatter the remaining crumble mixture on top.
Bake for 25 to 30 minutes, or until lightly golden. Allow to cool completely in the tin before slicing into bars. Store in an airtight container for up to 5 days.
